Prepare the corn: If you’re using fresh corn, cook the kernels in boiling water for 5-7 minutes and then drain them. If using frozen corn, just thaw and drain them.
Make the batter:
In a large bowl, mix the cornmeal, flour, sugar, baking powder, salt, and pepper.
In another bowl, whisk together the eggs, melted butter, heavy cream, and paprika.
Add the wet ingredients to the dry ingredients and mix until combined.
Add the cheese: Stir in the grated cheese and the corn kernels. Mix well to incorporate everything.
Pour into the baking dish: Transfer the mixture into the prepared baking dish and spread it out evenly.
Bake for about 30-40 minutes, or until the top is golden brown, and a toothpick inserted comes out clean.
Serve: Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh herbs, if desired.
