Garlic Rosemary Roasted Pork Shoulder

Ingredients

  • 6 pound bone in pork shoulder
  • 4 tablespoons olive oil divided
  • 1 tablespoon paprika
  • 2 teaspoons kosher salt
  • 1 teaspoon fresh ground pepper
  • 6 cloves garlic minced divided
  • 2 teaspoon fresh rosemary chopped
  • 1 teaspoon fresh thyme
  • 5 large carrots peeled cut into large chunks
  • 3 pounds red potatoes cut in half or quartered
  • 1 large onion cut into chunks

For the gravy

  • 3 tablespoons flour
  • 3 cups chicken stock
  • salt and pepper to taste
