- 4 tablespoons olive oil divided
- 1 tablespoon paprika
- 2 teaspoons kosher salt
- 1 teaspoon fresh ground pepper
- 6 cloves garlic minced divided
- 2 teaspoon fresh rosemary chopped
- 1 teaspoon fresh thyme
- 5 large carrots peeled cut into large chunks
- 3 pounds red potatoes cut in half or quartered
- 1 large onion cut into chunks
For the gravy
- 3 tablespoons flour
- 3 cups chicken stock
- salt and pepper to taste
