Hamburger Soup

Instructions

  1. Prepare the Vegetables: Peel and dice the onion, carrots, and potatoes. Dice the celery. Set aside.

  2. Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and celery and sauté for 4-5 minutes, until softened and fragrant.

  3. Brown the Beef: Add the ground beef to the pot, breaking it up with a spoon. Cook until well-browned, about 5-7 minutes. Drain off any excess fat if desired.

  7. Add Frozen Vegetables: Stir in the frozen mixed vegetables. Return to a gentle simmer and cook, uncovered, for another 10-15 minutes, or until all the vegetables are tender.

  8. Serve: Taste and adjust seasoning if needed. Ladle the hot soup into bowls and enjoy!
