Shrimp and Salmon over Cheesy Grits

👩‍🍳 Instructions

  1. Cook the Grits:
In a medium saucepan, bring the chicken broth and milk to a gentle boil.
Slowly whisk in the grits and reduce the heat to low.
Stir frequently for about 5–7 minutes (or according to package directions) until thick and creamy.
Add butter, shredded cheddar cheese, salt, and pepper. Stir until smooth and melted.
    Cover and keep warm.

  2. Prepare the Seafood:
Pat dry the shrimp and salmon pieces with paper towels.
Season with salt, pepper, paprika, and chili flakes.

  3. Cook the Salmon:
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
Sear the salmon pieces for 2–3 minutes per side until golden and cooked through.
    Remove and set aside.

  4. Cook the Shrimp:
In the same skillet, add another tablespoon of oil or butter.
Add the shrimp and cook for 1–2 minutes per side until pink and slightly crispy.
Add minced garlic and cook for another 30 seconds.
Squeeze in a bit of lemon juice and stir to coat everything nicely.

  5. Make the Garlic Butter Drizzle (optional):
In a small pan, melt 2 tablespoons of butter with minced garlic and a pinch of paprika.
Add a squeeze of lemon juice and stir — this will be poured on top later for extra flavor!

  6. Assemble the Dish:
Spoon the warm cheesy grits into a bowl or plate.
Top with the shrimp and salmon.
Drizzle with the garlic butter sauce and garnish with chopped parsley.

🍽️ Serving Tips

Serve hot with a side of sautéed spinach, roasted asparagus, or a fresh green salad.
This dish also pairs beautifully with a chilled glass of white wine or lemonade for a cozy weekend meal.

💡 Chef’s Tip:

Use freshly grated cheese for the grits — it melts better and gives a creamier, richer texture. And don’t skip the lemon juice — it brightens up the seafood perfectly! 🍋
