Veggie Egg Bites

Preheat Oven to 350°F (175°C).

Grease a Muffin Tin with nonstick spray or line with silicone baking cups.

Sauté Vegetables (optional): For extra flavor, lightly sauté the onions, peppers, and spinach in a pan with a little olive oil until softened. Let cool slightly.

Whisk Eggs & Milk in a bowl until fully combined. Stir in salt, pepper, and any other seasonings.

Add Cheese & Veggies to the egg mixture. Mix gently.

Pour Mixture evenly into the muffin cups (fill about 3/4 full).

Bake for 18–22 minutes, or until the egg bites are set and slightly golden on top.

Cool & Serve: Let them cool a few minutes before removing from the tin.
