Prepare the Pork Tenderloin
Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and place a wire rack on top.
Season the Pork: Pat the pork tenderloin dry with paper towels. Season all sides with salt, black pepper, garlic powder, and smoked paprika.
Wrap in Bacon: Lay the bacon slices on a cutting board, slightly overlapping each slice. Place the pork tenderloin on top of the bacon. Carefully wrap the bacon around the tenderloin, securing it with toothpicks if needed.
Make the Brown Sugar Glaze
Mix the Glaze: In a small bowl, combine the brown sugar and Dijon mustard. Mix until smooth.
Brush the Glaze: Place the bacon-wrapped tenderloin on the prepared baking sheet. Brush half of the brown sugar glaze over the top of the bacon.
Bake the Tenderloin
Bake: Transfer the baking sheet to the preheated oven. Bake for 25-30 minutes, brushing with the remaining glaze halfway through cooking.
Broil for Crispiness: Once the tenderloin is cooked through and reaches an internal temperature of 145°F (63°C), turn on the broiler. Broil for 2-3 minutes, or until the bacon is crispy and caramelized.
Rest and Serve: Remove the tenderloin from the oven and let it rest for 5-10 minutes before slicing. Serve warm.
Cook’s Notes and Tips
Bacon Overlap: Make sure to overlap the bacon slices slightly to ensure that the tenderloin is fully covered and the bacon stays in place during cooking.
